HOMEMADE SINGLE-SERVE MICROWAVE MACARONI AND CHEESE IN A MUG


I have seen many recipes for macaroni & cheese in a mug
made in the microwave...I tried a couple and didn't care too much
for them...but...this one is good...
and it uses really simple ingredients so its easy and quick to make...

I am about to figure out how many carbohydrates in it
and see if I can fit it in and still control my glucose readings for
the day...if so..it will be my side for supper tonight!


NOTE:  Using Essential brand products for this recipe it adds up to
Calories-229...Carbohydrates-26...Sodium-180
(this will vary depending on the type of shredded cheese and macaroni
you use).

EASY TUNA MAC & CHEESE CASSEROLE


I know...I know!
Huh??  Wow!  Oh man!  Is this for real???
You are kidding me!
...get outta here!!

This Mac & Cheese is topped with Rice Krispies!

...this definitely falls into that "Oof-da" kind of recipe category!!



but...believe it or not...there is something about this casserole
that just looks so good to me....
I will try it soon....
it's too unique not to try...

CRUNCHY EGG SALAD & PEPPERONI SANDWICH



I decided to get a little pretty and fancy with my lunch
today...and believe it or not even with this as part of
my day I am still staying within my recommended amount
of carbohydrates, calories and sodium...
it looks like it would be very unhealthy with the pepperoni salt
and bread carbohydrates but actually it is not bad at all...
I just have to adjust the rest of my food for the day to
compensate for it...

...first of all...I love the Walmart
Bolillios Rolls...
I can't get enough of these things....they are great for any kind of
sandwich...
my husband and I refer to them as football buns because
of the shape and color of them...

so...for this sandwich I first cut up 5 slices of pepperoni..
that sounds like a silly little amount but again it helps me stay
within my sodium amount for the day and when you chop it up you
get plenty of flavor from just 5 slices....


..next I took 2 hard boiled eggs and mashed them up 
with 2 tablespoons of Hellman's mayonnaise...
of course you can use your favorite brand of mayonnaise
or miracle whip..either one is fine...
I didn't add any onion or other spices to this since the
pepperoni will be spicy but you could add anything
you like mixed in with your egg salad...

 

...before I started to put this together I cut the roll in half length-wise
and put it in the microwave for just a few seconds until it was nice
and warm and then wrapped it in plastic wrap and set it aside to cool...
this is not required of course but
it gets nice and soft if you do that..


...spread the egg salad evenly between the two sides of the roll
so you have an open-faced sandwich...it makes it look very pretty
and it also makes it seem like you have a bigger amount of food
for this meal than you really do! ..this helps to stay with your diet I think...

...after covering the roll with the egg salad I added a little bit of
pepper on top...partly for taste and partly to pretty it up more too...

...now I scattered the little pieces of my pepperoni all over the top of
the egg salad...

...on top of that I crushed a few chips to give this sandwich that
crunch that we all like so much...I had measured out a one ounce
serving of baked chips so I just added what was left over of them
as a little side...you could serve with anything else that fits into
your diet numbers for lunch such as a nice pickle or some raw vegetables
instead of the chips...

and...waa-laaaa!
...here is how my sandwich looks...
it was very nice to look at and tasty...I was more than full after I ate
it and I enjoyed the combination of the egg salad and the little taste
of salt from the pepperoni and crushed chips...

how proud little kids would be to make this and have it on
display....
it's quick and easy but they will feel like they are really
special when people tell them how pretty it is...

CHILI-PASTA SKILLET


I think this looks really good...
I bet it would be great with a little bacon added
to it too...it's a pretty easy meal to make ...
 it has simple ingredients.... you just cook and brown
the ground beef and then toss the rest into the same pan..simmer and...that's about it
it's ready to eat...

PAPER DAISIES AND DANDELIONS


Have you ever watched a little child when you take them out for
a walk in the spring and they come upon a patch of dandelions ?
Usually their first thought is to pick a bouquet for Mommy or Grandma...
those are precious memories to keep in you heart and think about
when they are all grown up and they don't get so excited over all of those
little things as much anymore...because their minds are filled up with
grown-up things by then...

I came upon this website that has templates for making paper
daisies and dandelions...they look like the real thing...make some
of these and you may realize how close spring really is now...

KING RANCH BUBBLE UP



Wow...how tempting this one looks...
and how easy to make it too....
I think these bubble up recipes are the greatest thing...
it seems like most of them use pretty common ingredients
that are easy to find if you don't already have them in your house...
and they look so fantastic when ready to eat...

I love anything that uses melted Velveeta Cheese in it....
another thing about this kind of recipe is that you can easily
leave out any of the ingredients that you prefer not to use and
you still end up with a delicious baked dish....

GRILLED CHEESE BACON CRESCENT SQUARES


I have probably mentioned many times that I love
crescent rolls because you can make so many easy
recipes using them...and most of the recipes take only
a few ingredients too..
well here is another one I came across a few days ago...
how much easier can cooking get than this...
and on top of loving the crescent rolls I have always
been a big fan of Velveeta cheese...
just the original kind without anything fancy in it...

...the recipe does say you can use any cheese
of your choice though...so if you like another kind better or
want to keep the salt etc. down...go for it!

PERFECT OVEN BAKED FRIES


Look how golden brown and pretty these fries look...
and the recipe looks easy to make too...
These would go great along with any sandwich or
burger or hot dog or anything!

I am in total agreement that it is frustrating when you make a batch
of homemade fries and when you take them out of the oven you
have to scrape and chop away at them and end up with a big mess
because they are stuck to the pan you baked them on....
...well she says these are easy to remove and they turn
out nice and crispy too...
can't wait to try making them soon...

MOZZARELLA BUBBLE BISCUITS


These look delicious...
I can think of so many different kinds of
meals they would go great with...
myself...I could easily eat them as a snack or
just by themselves for lunch...

They are easy to make and outside of the oregano
I usually have the ingredients on hand....
I will probably make these without oregano as I would
not be using it enough overall to buy it...
but I'm sure they will be just as good with or without it...

CREAMY POTATOES & PEAS


All I can say to this recipe is...oofda!
Wow does this look good...
I am picturing it along with pork tenderloin or ham...

I am being really good now with watching my carbohydrates and sodium
but when I see something that looks this delicious I think to myself...
when I take a day off from being careful with what I eat I am going
to make this!

This would be great for a holiday dinner or
any other day...it just looks so good...
and I see someone in the comments under the recipe suggests
adding a little bacon to it...yum!

MARSHMALLOW POPCORN BALLS


One time some years ago I was making marshmallow popcorn balls
for one of my granddaughter's classmates in school...
two of my grandsons were here at the time and they kept asking to have one...
they were two and three years old so I thought "I just don't think they could
eat a whole one of these".....because they were pretty big popcorn balls...
so I took one and cut it in half and gave them each a half...
they stood alongside of me in the kitchen and the two year old was munching
away on his half...but the three year old stood there checking it out for a while
and then took a little bite of his and turned around and walked to the
garbage basket and threw it away...
I asked him "why did you throw it away?"...
he looked at me with a disgusted expression on his little face and said,
"I only eat whole ones"!
ha ha...it still makes me laugh when I think of it...
